Squash is good on anything.

And I stand by that statement. Happy Wednesday, lovelies!! It’s been a cold day full of shaking and grooving and I was ready for a big ol’ meal when I got home and into my cozies. So obviously I got cooking.

Easy kitchen witching today, babes! Delicata squash salad with a bowl of fries (my housemate’s work gifted her an air fryer we all get to relish and I’ll tell you what, it’s a game changer). But! Let’s make a tasty salad!

What you’ll need:

  • One delicata squash, halved, seeded and roasted in a oven at about 350 degrees F for 25/30 minutes

  • a good handful (or two) of curly kale and romaine

  • some candied walnuts or pecans

  • some shredded carrot (I used yellow carrot!)

  • a creamy Camembert (y’all, as much as you want because cheese is life)

  • a simple dressing of olive oil and balsamic

  • salt and pepper to taste

I don’t want to harp about how to build a salad, just throw everything in a bowl and get eating my loves.

I love you, your body loves you, fill it with good food because you deserve to nourish that good body of yours!
